Signature Cocktail #40: Corn Milk Cocktail

Corn. Many consider it a vegetable, but it’s actually a grain, which means it’s technically also a fruit. Oh, corn, you tricky thing, you! Befuddling classifications aside, almost all will agree that the picnic table staple is a very unlikely cocktail ingredient. But that didn’t stop nutritionist and wedding wellness expert Carlene Thomas from turning fresh-off-the-cob kernels into the sweet and surprising star of this summery nog. Read on for the recipe, and savor the last bits of the fading season with this strangely addictive sip!
Recently, I’ve been overwhelmed by the amount of corn in my CSA. Although it’s easy to roast and top with feta or slice and throw into a salad, I knew there had to be a way to—what else?—turn it into a cocktail! Sweet corn is just that: sweet. It’s not overly powerful, and it has a light fragrance that pairs perfectly with something creamy. Try this; you won’t be sorry you did!

Ingredients (Makes 1 large or 2 small)
♦ 1/2 cup of skim milk
♦ 1 cup of fresh sweet corn
♦ 2 tablespoons of bourbon
♦ 1 teaspoon of vanilla simple syrup (or 2 drops of vanilla and 1 teaspoon of sugar)
♦ Pinch of cinnamon
Cut corn off cob. Add to milk and blend using an immersion blender or standing blender. Strain out solids. In a shaker filled with ice, combine corn milk with bourbon, vanilla simple syrup, and cinnamon. Pour into a glass.

What an interesting idea to make corn milk! I have tried corn milk before so thanks for providing the recipe, it's definitely one I am inspired to recreate.
