Signature Cocktail #30: Spring Beet

The humble, earthy beet might seem like an unlikely cocktail ingredient, but leave it to wedding wellness expert Carlene Thomas, a nutritionist with a knack for mixology, to unearth the libational potential of this lowly root veggie. Here, she shares the recipe for a beautifully colored beet tipple with a gingery kick.
When you think of beets, the word sweet probably doesn’t come to mind, but did you know there’s a specific beet that’s used for sugar production? Even the typical red beets that you’re used to seeing in the grocery store have an undeniably sweet taste. So, of course, being someone in the nutrition profession, I had to find a way to make beets work in a cocktail. I paired beet juice with ginger to create a spunky and sweet sip for spring.

Ingredients (Serves 1)
♦ 1 1/2 ounces of gin
♦ 1 ounce of ginger liquor (simple syrup and ginger)
♦ 2 ounces of pickled beet purée/beet juice
♦ 1/2 an ounce of lime juice
♦ Sliced ginger (garnish)
♦ Lime (garnish)
Make a simple syrup and add sliced ginger to infuse. In a glass, add ice and pour in gin, lime juice, and ginger syrup (mixed together) to form the bottom layer. To create the top layer, slowly pour in beet juice, keeping it separated from the bottom layer. Stir together before drinking.
