Signature Cocktail #19: Spiced Pumpkin Shrub

Our wedding wellness expert, Carlene Thomas of Healthfully Ever After, whipped up this sophisticated pumpkin cocktail recipe just in time for Halloween festivities. One taste of this autumnal tipple, with its delicate pumpkin flavor and textured notes of maple, cinnamon, and ginger, is enough to make a convert out of even the most pumpkin-averse sipper.
For a clean fall cocktail, a pumpkin-flavored mixed drink was in order, but I didn’t want the flavor to come from a store-bought syrup, the kind you might find in a cup of coffee. Starting with a gorgeous in-season sugar pumpkin, this treat takes you beyond ordinary pumpkin drinks to a spicy, spunky, and richly layered cocktail.
Ingredients (Serves 4)
♦ 1 small sugar pumpkin, roasted to yield 2 cups (alternative: canned puréed pumpkin)
♦ 1 cup of sugar
♦ 1/2 tablespoon of ground cinnamon
♦ 1/4 inch of sliced fresh ginger
♦ 1 1/2 cup of cider vinegar
♦ 5 tablespoons of pumpkin shrub
♦ 1 1/2 ounces of vodka
♦ Ginger ale (to fill glass)
♦ Maple syrup
♦ Vanilla bean and sanding sugar to garnish
To make shrub: Cut stem from pumpkin and slice in half. Scoop and remove seeds. Place pumpkin, skin side up, on a baking sheet. Bake at 350° F for 45 minutes or until you can easily pierce with a fork. Let cool and scoop pumpkin from skin. Add 2 cups of roasted pumpkin to a jar. Add sugar and spices and shake. Store in the fridge for 24 hours and then add cider vinegar. Shake and return to fridge for several hours. Pass the pumpkin mix through a food mill or sieve. Return milled liquid to a jar and store in fridge until needed.
To make cocktail: Coat the rim of the glass with maple syrup and dip in sanding sugar. Add ice to glass followed by pumpkin and vodka. Stir and top off with ginger ale. Garnish with vanilla bean.
